FS&T Partners with the Food Services Department of the Tobago Regional Health Authority

The Tobago Regional Health Authority (TRHA) is the management body of the health care facilities in Tobago, which includes the Scarborough General Hospital and nineteen (19) health centres. The Food Services Unit is integral to the functioning of the Scarborough General Hospital, as it provides meals for various patients, ensuring that their nutritional needs are met during hospitalisation.

Jarren Joseph, a year 3 student in the Bachelor of Science in Food Science and Technology, was placed in the Food Services Unit of the TRHA for his internship project. The main objective of this was to gain the knowledge and experience required to manage a business/unit. This objective was achieved by a full rotation throughout the entire department, with exposure to:

  • Development of forms for stock-taking
  • Working on a redesign of the current kitchen
  • Working in the cafeteria of the hospital; serving and assisting customers
  • Assisting in the development of new dishes in the main kitchen
  • Serving patients on the various wards in accordance with specified diets
