As an advocate for cultural preservation, pastelles became entwined into the daily lifestyle. Maria recognised the opportunity and in 2010 a company was formed and registered. The product was evaluated by the Chemistry Food and Drugs Lab and satisfied the content requirements for retail. Initially friends and family were supplied and at present, the enterprise has expanded to supply supermarkets. This company currently supplies one of the largest supermarket chains in Trinidad and is continuously looking for more effective production methods and new markets.
